I grew up eating chili and it has been one of our family’s favorite. I remember being so excited every time my mom is cooking up chili for dinner. I can smell the beef chili even when I’m in the next room. My sisters and I would be asking many times if it’s dinner time already so we can already taste her dish! Oh, how I miss those times and my mom’s recipe!

The only difference in my instant pot chili from my mom’s is that instead of cooking it using the stove top, I cook it using a pressure cooker. Like my mom’s chili, it really tastes like it has been simmering all day long, but the truth is that it has only been prepared for one hour. That’s the magic of having an instant pot!

Here are the easy steps for making your very own homemade instant pot chili:

1. Change your instant pot settings to the saute function and give it some time to heat up.

2. Put in the diced onions and ground meat. Brown your ground meat for a minute.

3. Add in your broth and gently scrape up the browned bits off. (Important Note: this third step is necessary because leaving lots of browned bits may cause your instant pot to not come to pressure properly)

4. Once you scrape every piece of brown bits off, you can now add in the beans and remaining seasonings. Do not forget to place a lid on your instant pot with the valve closed to “sealing.”

5. For about 30 minutes, cook on high pressure for dried beans.

6. Allow pressure to naturally release–about 15 minutes.

Meat: You can also use turkey or beef for your instant pot chili! As a matter of fact, you can use chicken or pork! Go and experiment with other types of meat and see what works best for you and your family. Of course, beef is the top choice since it is the classic take on chili. But I’m sure using another type of meat would work too. 

Beans: Chili can be prepared using either canned or dried beans in the instant pot. For me, I prefer kidney beans or red beans. But I also discovered that pinto beans and black beans work just fine. They ate also great options for chili.

Do not worry because no matter what type of meat or beans you use, the cooking time will remain the same for your instant pot! Isn’t it amazing? An instant pot really does wonders.

Have you ever heard of people saying how chili only gets better after it sits for some time? For me, this is absolutely true. Leftover chili is way better than freshly made chili in my opinion. I think the reason behind this is due to the time the flavors have been mixed together.

Instant pot chili lasts for about 4 to 5 days in the fridge. But the truth is, we rarely have any chili leftovers to fridge! But if we do, we place it in the fridge for quick meals the days after.

What is the best Instant Pot size?

When I was shopping for an Instant Pot for the very first time, the first thing I noticed is the fact that Instant Pots comes in different sizes. There are 3-, 6-, and 8-quart options.

For most people, I believe that the 6 quarts are just fine. It's the perfect size you need to prepare a decent amount of instant pot chicken soup or instant pot chili. Just in case that you find yourself doubling up that instant pot chili recipe (or if you have a large family) then you must opt for a bigger 8-quart model.

Personally, I would like to go for the smallest one since I’m usually cooking for 2-3 (I have a toddler). However, 6-quart is the safest choice.
