Experience a unique Filipino noodle soup that will satisfy your hunger

If you are craving for a savory soup and noodles at the same time, this is the answer. Try Chicken Sotanghon, it's just like "Tinola" but with the addition of Sotanghon noodles to satisfy your tummy. It's really simple to make and in no time, you'll be on your table slurping this Filipino recipe.

Ingredients

500 grams chicken, cut into serving pieces

200 grams Sotanghon noodles, cut into the desired length and soaked in water until soft

7 cups chicken stock

1 carrot, julienned

1 cup cabbage, shredded

3 cloves garlic, minced

1 medium onion, sliced

1 tablespoon patis

2 tablespoon olive oil

Salt and pepper to taste

Cooking Instruction

- Heat oil in the pot and saute garlic and onion

- Add chicken and stir-fry until light brown. 

- Add 1 tablespoon patis and continue stirring.

- Pour chicken stock then bring you to boil, simmer until chicken is cooked.

- Adjust seasoning with salt and pepper

- Add Sotanghon noodles and carrots then simmer for another 3 minutes. Add water if needed.

- Add cabbage and simmer for another minute.

- Transfer to a serving bowl and serve hot.

Pancit Lomi is a very interesting dish, it's a noodle dish but it tends to be a heavier meal compared to the usual Pancit than we eat. Ingredients

400 grams Lomi noodles

2 tablespoon oil

1 cup chicken liver, cut into cubes

1 medium onion, chopped

2 cloves garlic, minced

200 grams chicken breast or thigh, cut into thin strips

1 tablespoon patis

400 grams crab and corn soup mix

Salt and pepper to taste

2 medium carrots, julienned

1 small cabbage, sliced into 1 inch thick

2 eggs lightly, beaten

1 tablespoon cornstarch

8 cups of water

Cooking Instruction

- Boil enough water to cover Lomi noodles and blanch for 1 minute. Drain and rinse in cold water.

- Heat 1 tablespoon of oil in a pan over medium heat. Cooke liver until done, removed and set aside.

- In a large pot, heat another tablespoon of oil and saute onions and garlic. Add chicken and cook until light brown.

- Add 1 tablespoon patis and cook for another 2 minutes.

- Add 8 cups of water and bring to a boil. Lower heat until chicken is cooked.

- Add Lomi noodles and cook for 5 minutes until soft but firm to bite.

- Add crab and corn soup mix and stir until dissolved. Season with salt and pepper.

- Add the liver and carrots and cook for another 1 minute.

- Add the cabbage and cook for 1 minute.

- In a small bowl, combine cornstarch with 1/4 cup of cold water and stir until dissolved.

- While stirring, add the cornstarch and continue cooking until slightly thick.

- Add eggs slowly in a thin stream while stirring.

- Remove from heat and transfer in a bowl then serve.
